1/3 cup peanut butter
1 cup brown sugar
1/3 cup soymilk (up to 1/2 c.)
2 Tbsp margarine
2 tsp vanilla
1 cup whole wheat pastry flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup oats
1/2 cup chocolate chips

Preheat oven to 350 or 425*. Stir together peanut butter, sugar, milk and vanilla. In a separate bowl, combine flour, cinnamon, baking soda, salt, and oats. Add to other bowl, and mix. Fold in chocolate chips. Drop onto sprayed cookies sheets by the spoonful, and bake for 8 - 10 minutes. Cool for a few minutes on the sheet if you want crunchier cookies, then move to racks to cool the rest of the way.

*If you like them chewy I bake them at 350. Then the outside is a little crunchy and the inside is nice and chewy. If you like them crunchier, cook them at 425.

Monster Cookies
For monster cookies replace the measly 1/2 cup chocolate chips with: 1/3 cup chocolate chips, 1/3 cup chopped walnuts, 1/3 cup coconut, and1 mashed ripe banana (optional)
