3/4 cup margarine
1 cup firmly packed brown sugar
1/2 cup sugar
1/4 cup soy or rice milk
1 egg substitute
1 teaspoon vanilla
1 cup all purpose flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups rolled oats
1 cup chopped walnuts
1 cup Raisins
Place raisins in a bowl and cover with boiling water. Set aside. Heat oven to 350 F. and grease 2 cookie sheets. Combine margarine, sugars, 'milk, egg substitute (such as 1 mashed banana) and vanilla; beat until light and fluffy. Combine flour, cinnamon, baking soda and salt. Add to margarine mixture; mix well. Stir in oats, walnuts and raisins. Drop by teaspoonfuls onto both greased cookie sheets. Bake one sheet at a time for 12 to 15 minutes or til starting to brown on the bottoms. Makes 3 dozen cookies.
