This recipe is a pure-bred original creation by Fran.
[ Makes 6 dozen ]
1 cup tahini
1 cup honey*
1 tsp vanilla
1 teaspoon cinnamon
3 cups quick cooking oats, coarsely processed
1 cup chopped walnuts, sesame seeds, sunflower seeds, or mixture
1/2 cup raisins, soaked & drained and roughly chopped (optional)
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, stir together the tahini, honey and cinnamon. Mix in walnuts and oats until well blended. Drop by teaspoonfuls onto the prepared cookie sheets. Cookies should be about 2 inches apart.
Bake for 10 minutes in the preheated oven, or until edges are slightly brown. Cool on the baking sheet for a few minutes before removing to wire racks to cool completely.
* Honey is technically not a vegan food as it is an animal product. If you’d like to substitute it for a plant-based sweetener you can use brown rice syrup (which can be thick like honey), corn syrup (though this is very sweet), or maple syrup (which may be too runny).
