If you hate kale you might love it after eating this pasta dish.

1 small bunch kale, spines removed, thinly sliced
12-oz udon, soba, buckwheat, spaghetti or fettucine, broken in half
2 Tbsp toasted sesame oil
2 Tbsp soy sauce
2 Tbsp toasted sesame seeds
2 Tbsp toasted pine nuts
2 cloves of garlic, crushed or grated
1” cube of ginger, finely chopped

Cook pasta for 5 minutes less than its total cooking time. Add kale. Cook 5 minutes more. Drain and return to pot.

Toast pine nuts in a drop of olive oil til golden. Remove pine nuts, then add garlic and ginger and sautee a few minutes. Add to cooked pasta and kale, along with sesame oil and soy sauce. Toss. Add sesame seeds and pine nuts. Toss again. Serves 4.
