Dressing
1/3 cup freshly squeezed lime juice
1/4 cup olive oil
2 tablespoons soy sauce
2 teaspoons Dijon mustard
Salad
1 mango, sliced or cubed
1 avocado, sliced or cubed
1 cup fresh mushrooms, sliced
2 handfuls lettuce, shredded
1/2 red onion, thinly sliced into crescents
1/4 cup cilantro, finely chopped
optional: corn kernels, julienned celery, carrot shavings
Combine all dressing ingredients in a jar. Shake well. Pour half the dressing into a large salad bowl. Place salad ingredients in the salad bowl with the dressing already in it, and toss well to coat.
Alternately, omit shredded lettuce from recipe and place dressed salad onto plates lined with Boston lettuce leaves.
