2 cups raw sunflower seeds
3/4 cup grated carrot
3/4 cup chopped onion
1/4 cup flour
1/2 cup mashed cooked potato
2 Tbs sunflower oil
1/4 cup nutritional yeast
1/2 tsp salt
1 tsp lemon juice
2 Tbs salt-free seasoning (Mrs. Dash, Vegit, etc)
1/8 tsp ground coriander
1/4 tsp dried parsley
Few dashes Liquid Smoke (optional)

In a small frying pan, stir-toast flour until golden. Remove from pan and set aside. Add sunflower seeds to the pan and toast until lightly browned. Remove from pan and set aside. In 2 Tbsp of oil, stir-fry onion until golden. Add carrot, and stir-fry until soft. Add potato, and stir-cook until hot. Sprinkle toasted flour over all, and mix in. Cook, stirring constantly, 5 minutes.

Put contents of pan into a food processor. Add rest of ingredients, and process to a smooth paste, adding a little water, as needed, to process. Adjust seasonings. Pack into a container lined with plastic wrap, cover, and refrigerate. To serve, invert the container releasing the pate, peel off plastic wrap and serve with crackers.
