Mashed banana:
Use 1/2 a banana, mashed or blended, for every egg.
Great for baked goods like muffins, pancakes or cookies,
Will give the food a mild banana flavour.

The flax mixture:
For each egg: 1/4 cup of water blended with 1 tablespoon
of ground flax seed, processed at high speed for 1 minute.
Will produce a gloop with the consistency of beaten egg.

Baking Starch mixture:
For each egg: Whip together 1/2 tsp baking soda, 1 tsp baking powder, 1 Tbsp unbleached white flour, 1 Tbsp cornstarch and 3 Tbsp water in a small bowl until fluffy. Make mixture right before needed. Double or triple the recipe depending on how many eggs are called for.

Just leave the eggs out:
Some recipes fare just fine without the eggs, like in pancakes, cookies and even muffins.
